Weekend Recap

Happy Monday everyone! After a fantastic and busy fun filled weekend, this is how I was feeling this morning – must.have.coffee!

Last week was a bit rough for me, so the weekend started out with a much-needed girls night to an Asian/Sushi restaurant, where we filled our table up with so much food. #noregrets  We couldn’t believe our eyes when this bento box came out! My food wasn’t that great, so I picked off of everyone else’s…a little sushi, a little shrimp from the bento…yum!

We also saw My Big Fat Greek Wedding 2, which I loved! There were many references to the first one, which is one of my all-time favorite movies. I even have it on VHS (embarrassing). Have you seen it yet or are you planning to? I love that all of these movies and shows are coming back from years ago. I can’t wait for Independence Day: Resurgence this summer! Another one of my favorite movies.

And have you watched Fuller House yet? It’s so cheesy and exactly what I was expecting. I love that they laugh at themselves (and the Olsen twins) and reference Full House quite a bit. Then there’s Gilmore Girls, can’t wait for Lorelai and Rory to come back! I wonder if Lorelai and Luke will be married? The ending of the show was such a cliff-hanger! I think I literally screamed…”What! That’s it!!” So yeah, excited about that one 🙂

Saturday morning I made myself this yummy breakfast! It’s a great example of my typical weekend brunch using the 21 Day Fix and Weight Watchers. This is 3 veggies, 1.5 protein, 1 carb, and a smidge blue – all for 9 smart points! I wrote a post about using what works best for me (using these two together).

As I was eating my breakfast, I got the best picture ever from my Aunt! We were joking at dinner about my post where I said,“I’m convinced you can make any kind of leftovers into breakfast if you just add an egg!” #eggobsessed

So I told her that she should take home her leftovers and use it for breakfast, and she did! And then I started the new hashtag – #PutAnEggOnIt. If you use up your leftovers and add an egg make sure you use this hashtag! I’m also extremely impressed with her plating skills!

After brunch, we went to the grocery store to pick up some more food for the weekend and then went on a short hike on a nearby trail. If you’re ever in the Holland, MI area – Riley Trails is a nice and pretty easy place to hike, mountain bike, or cross-country ski. It was a gorgeous day, so we definitely wanted to be outside! Spring might have actually sprung in Michigan.

Riley TrailsAfter that, we went home and made some delicious burgers. I resisted these brioche buns from Trader Joes (a lesson in checking points – they were 16! I almost guessed them around 7, whaaat).

I also attempted my first ever double layer chocolate cake (for Easter) with these cool new Silicone Cake Baking Pans. It was much easier than I thought, I don’t know why I’ve waited for so long to try it out. AND it was delicious!

That night we went to hear a band play and it was awesome. The next day we went out to Easter brunch and then headed to the trails again for a longer walk, so I had to bring a snack 🙂

The rest of the day was all about relaxation, watching movies, working on the blog, getting ready for the week, and eating some delicious Shephard’s Pie from Costco. It’s a bit of a splurge, but oh so yummy!
