So this is how my Wednesday started….Happy Hump Day!
This morning I decided to use up my delicious leftovers from last night’s dinner (chicken, caramelized onions, jalapeno, and broccoli) to whip up some breakfast.
I started by warming up the leftovers in my trusty Calphalon Nonstick Pan, then getting my morning cup of coffee ready in the Keurig. If you’re anything like me, you need that cup of joe to get going in the morning, so I wanted to start sipping while I was cooking!
The leftovers were warming up, I’d added in some tomato and scrambled eggs, then I thought “ohhhhh I should add avocado on the top”! During that time I’d taken my beautiful cup of coffee out from under the Keurig and placed it next to the stove. Not yet taking a sip….
I grabbed a half of an avocado that I had leftover from yesterday (with the pit still inside) and was pondering how to get said pit out. Wanting to hurry up, so that I could stir my leftover/egg mixture and thinking “I really need to learn how to do this more efficiently.” I grabbed a spoon and started to scoop it out (what I thought was gently) and suddenly it goes flying through the air and straight into my coffee cup! No joke, slam dunk! Here’s the aftermath as I sat
silently weeping staring at my perfect cup of coffee.
I thought this was pretty hilarious, I mean what are the odds that it would go straight into my coffee cup! So the lesson learned here is – figure out the best way to get a pit out of an avocado! Any tips or suggestions would be highly appreciated – help me save my next cup of coffee 🙂
